Who would have thought that Pigs have Wings? These tasty cuts of Pork are similar to the Pork or Lamb Shanks, except the Pig Wings only have 1 single bone in the middle. What are Pig Wings?

These are a meaty portion of the Back Leg on the bone, weighing approx 350g.

Pig Wings are a cut of muscular meat with coarse texture with the thinner single bone through the middle of the meat. They get their name because they have to be opened up to remove one of the 2 bones found inside, the meat has a wing like appearance when opened & laid out flat.

The section of the leg that these are taken from is also referred to as a Ham Hock or Pork Shank if the skin is left on & the 2 bones are left in.

How are Pig Wings made?

The Pig Wings are cut & prepared as a finished product from the section of Back Leg between the knee & trotter.

To make the Pig Wings the butchers cut the whole Pork Shank from the Leg complete with the bones & Skin. The skin is removed without cutting into the meat, this piece has the top of the bones sawn through to remove most of the knuckle joint. The meat is stripped back from the thicker bone & the bone is removed, leaving only the thinner single bone inside the meat.

The result of making the Pig Wings with no skin & only 1 bone, gives you a high meat to bone ratio, with the cooked on the bone flavour. The Wings are approx 11cm long & 5cm in diameter. They are light Pink in colour with some residual fat on the outside (this will render during cooking).

How do we pack Pig Wings?

The Pig Wings are packed into clear plastic pouches, 2 portions per pack.

Once the Wings are fully trimmed & prepared by our expert butchers, they are placed into our Freezer Friendly Clear Recyclable Pouches. The pouches are labelled with fully traceability from Farm to Fork, placed into reusable plastic crates & then “Blast Frozen”to -25°c.

The cutting & packing of the Pig Wings is completed within 10 minutes, the meat is cut at a very low temperature just above freezing (approx 4°c). The meat is Vacuum Sealed in the clear pouches, this process removes the air from the pouch & sucks the juices into the meat. This process keeps the moisture in the meat, holds the shape & keeps the natural flavour inside the meat.

The combination of all the process from cutting, packing & freezing gives the Pig Wings a 24 month frozen (-18°c) shelf life. The clear pouches ensure the safety of the meat inside, they are perfect to hold the meat when slowly thawing out in the fridge. The pouches prevent any external contamination when being delivered to your door, when being packed for your orders & from any freezer burn when stored.

The plastic pouches we are now using are thinner & stronger to reduce the amount of plastic used annually, keeping in line with our Green Policy of a “Lower Carbon Footprint”. The production facilities are BRCGS / IFS approved that make any of our meat cuts or products. All the air is filtered & refrigerated in cutting & packing rooms, the butchers & packing staff change into clean protective clothing before commencing work, all the precautions reduce the spread of natural bacteria. The low temperatures help to keep the meat from losing its natural juices, this makes for a juicier piece of pork with a more natural flavour when opening at home.

Sourcing our Pork locally from Northern France & Belgium ensures we have a sustainable supply of high quality pork from good welfare farms. Having top grade pork allows us to make “Restaurant Quality” pork cuts in larger volumes to supply homes & restaurants across the UK & Europe.

Our choice of preferred Pig breed is “Pietrain Pig”, this is found mainly in the Wallonia region of Western Belgium.

These are a Pig with a good meat yield, low in cholesterol, good muscle structure & a mild temperament. The Pork has a good flavour & texture, combined with modern day slaughtering techniques are designed to be as humane as possible, ensuring light coloured, soft meat.

The colour of our Pork is a light pink & has no discolouring from bruising or a high PH level as the pigs have been looked after from farm all the way through to processing in the best humane way as possible. This makes sure that you get a tastier more tender piece of Pork that guarantees great flavour.

How do you cook Pig Wings?

Cooking Pig Wings is just like cooking Lamb Shanks, they are best when cooked Low & Slow.

The Pig Wings as we have mentioned, are a coarse cut of meat. Coarse textured meats are always more tender & succulent when cooked at a lower temperature for longer times. The meat breaks down much better when cooked slowly, the fibrous meat will pull apart easily with just a spoon. the preferred methods of cooking are Smoked on the Barbecue, in a Slow Cooker or on the Oven.

The Pig Wings have been around in America for many years, they are very popular as a Barbecue cut. They are definitely one of those Pork cuts that need to be tried in at least a couple of recipes, they are cheap to buy & easy to cook.

How to prepare your Pig Wings for cooking:

  • Set your Wings into the coldest section of the fridge (keep in the bag) to thaw slowly.
  • Once thawed, remove from the fridge & leave out in ambient temperature for 45 minutes (keep in bag).
  • Remove from bag, rinse under cold water, pat the meat dry with paper towel.

How to Smoke Pig Wings Low & Slow on the Barbecue:

  • Add a binder (Frenches Mustard or similar) to the whole surface of the Wings.
  • Season the Wings all over with your favourite Barbecue Rub.
  • Set your temperature to 120°c, place the Pig Wings evenly on the grill, close the lid & return 1 hour later.
  • Place a small segment of butter on each of the Wings & wrap individually with Silver Foil, close the lid.
  • Check the internal temperature has reached over 120°c & remove from the foil.
  • Glaze the Pig Wings in a sweet Barbecue Sauce, rest for 5 minutes & serve.

The best way to cook Pig Wings is on the Barbecue because the combination of the indirect heat & smokey aromas (from the wood chips) soften the texture & enhance the flavour for amazing results! A piece of meat you will wish to cook again on your barbecue as a meal to remember for your family & guests. These are a great finger food & easy to pull the tender meat from the bones with gentle bites.

How to cook Pig Wings in a Slow Cooker:

  • Cover the Pig Wings in olive oil & sear in hot pan over all surfaces.
  • Place the Wings in slow cooker with your chosen ingredients; tomatoes, bullion, water, herbs, salt, pepper etc. Bring to the boil.
  • Turn down the heat & simmer for 2 hours, turning the Pig Wings a few times throughout.
  • Remove the lid & slow cook until the sauce reduces down, these are now ready to serve.
  • The meat will pull off the bone with just a spoon when fully cooked.
  • You can use your Slow Cooker for the above method or a casserole dish with lid.

Cooking these slowly in the oven also with a choice rub will bring superb results to the meal table, keeping them wrapped to lock in all their natural juices make the meat “Melt in your mouth tender”. As these are popular, we decided to offer our two bone Shanks of Pork that are larger with even more meat on them & a little of the rind. These would be more ideally suited for sharing as they are nearly twice the size.
