Some people excuse the bleeding by saying that bones contain blood, and that the attack could have cut the sternum and ribcage and resulted in blood coming out. The problem with that is that monsters don’t bleed. While Papyrus is in the form of a human skeleton, he can bend and move his jaw and skull in ways real skeletons can’t, he also would bleed when decapitated if that is the case. He is white dry bone, the bones that are fresh aren’t bleached white.
None of the other monsters bleed either. Toriel gets gashes across her side and down her snout, and they are black as if the flesh or body mass there is just missing and nothing comes out. Undyne gets literally cut into two pieces, her top piece slides down a bit, no blood, no gore.

Also, if Sans was a living skeleton with blood in him, he would be bleeding everywhere and would be yellowish cream colored and pink and red with blood leaking out. Bones have a ton of holes in them where arteries and veins go through, the circulatory system connects to those bones, it’s not sealed in. If you somehow kept the blood, the marrow, the bones, and got rid of everything else, the blood would flow out of the vein holes. If you cut the sternum with a kitchen knife, it would break bones, not cut perfectly through them like a light saber. The perfect gash wound wouldn’t bleed through the clothes like that, it would also be leaking out his pants if he was a skeleton, as there’s nothing inside there, it would fall down through the ribcage and past the pelvis.

Either he is not a skeleton and bled, or he is not a skeleton and had ketchup packets underneath his shirt, or he is a skeleton and had a bunch of waterproof bags set up inside his ribcage so the ketchup would only come out at the cut and so the knife would not pierce the other side of the bags and result in ketchup leaking through the ribcage, and kept a ketchup packet in his jawbone and somehow bit it when he was hit, because with no trachea or esophagus or other organs there’s no way a wound to the chest would make blood or ketchup come out the mouth.
Sans also drinks ketchup without it just dripping down his chest, meaning he has to secretly have a throat and esophagus and a stomach. He also appears to be chugging it down, it’s not just pouring out into a tube into a bag.
