We all get in a side dish slump sometimes – same sides, different main dish.

I have you covered today with 12 of my favorite sides that whip up in a snap and go perfectly with Chicken Piccata.

WHAT IS CHICKEN PICCATA?

Chicken Piccata is a classic dish, simple recipe and one of my all time favorites.

Chicken cutlets dredged in flour, browned then simmered in a delicious lemony sauce with capers and artichokes.

With little effort, it comes together in under 30 minutes with basic ingredients from the grocery store.

It’s ideal for weeknights but with enough wow factor for date night or next dinner party.

BEST WINE FOR CHICKEN PICCATA:

My go-to wine for Chicken Piccata is the one I enjoy drinking with my meal, Sauvignon Blanc.

It’s light, citrusy and goes really well with the bright lemon flavor in this dish.

I also like Pinot Grigio or Pinot Gris also dry white wines. Just be sure to avoid sweet wine, such as Moscato.

WHAT’S IN CHICKEN PICCATA?

  • 1 pound boneless skinless chicken breasts
  • 5 tablespoons flour divided
  • salt and black pepper to taste
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup chicken stock
  • 1/4 cup dry white wine
  • 1/4 to 1/2 lemon juiced (to taste)
  • 3 tablespoons capers, drained
  • 6 ounces marinated artichoke hearts drained
  • 2 tablespoons fresh parsley chopped

my favorite CHICKEN PICCATA RECIPE:

Add 3 tablespoons of the flour to a shallow dish or plate.

Slice the chicken breasts horizontally to create thin cutlets (you can also pound the chicken until thin and even).

Season the chicken on both sides with salt and pepper then dredge in flour. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Add the chicken without overcrowding and sear 3-4 minutes per side to a beautiful golden color, then remove to a plate (chicken won’t be cooked through at this point).

  • Reduce the heat to low then add the remaining 2 tablespoons of butter to the skillet. Once it melts, sprinkle the remaining 2 tablespoons of flour over the top.
  • Whisk to combine and cook 1 minute. Pour in the wine, scraping up any brown bits from the bottom of the skillet.
  • Cook over low medium-low heat 2 minutes or until the wine is reduced by about half.
  • Pour in the chicken stock and juice from 1/4 of the lemon (or more to taste).
  • Simmer to let the sauce thicken then taste and adjust salt, pepper and lemon juice.
  • Return the chicken to the skillet then stir in the drained capers and artichokes.

  • Cook 5-7 minuts or until chicken is cooked through, spooning the chicken piccata sauce over the chicken.
  • Garnish with parsley and lemon slices then serve right away.

  • For Creamy Chicken Piccata, add a splash of heavy cream or half and half and some grated parmesan cheese to the sauce.
  • If you typically buy chicken broth, feel free to use it instead of chicken stock.
