What To Do With Leftover Sloppy Joe Meat

When telling my family that we will be having Sloppy Joes for dinner I can’t help but add, “and their extra sloppy”. Ha!

I have no idea if I heard it on a movie or what, but I HAVE to say it. Every. single. time.

Of course, I think I am hilarious.

And these easy Sloppy Joe Quesadillas are no exception to that odd rule!

At our house, we eat quesadillas at least once a week. When Ryan is on shift, it is a simple meal for me to prepare for the kids and I usually eat whatever leftovers we have in the fridge.

You all know, leftovers are my jam and the kids’ are always more than thrilled to have quesadillas stuffed with shredded chicken or pinto beans.

I eat my sloppy joes, bunless, and in a bowl with chopped dill pickles. The rest of my family enjoys it on buns, or because I never remember to buy buns, on sliced bread.

In all honesty, I wondered if my kids would be hesitant to eat these quesadillas. However, when they gobbled them up in 2.8 seconds flat, I knew this “recipe” was a winner. I hesitate to say recipe because there are no exact measurements.

I know. How can I post a recipe without measurements?

Because I believe in you that’s why. …It’s WAY too simple for pesky measurements. You’ll see!

Here is what you will need to make your own Sloppy Joe Quesadillas:

Sloppy Joe meat mixture (leftovers), warmed

Shredded Cheese (dairy free if needed)

Tortillas (flour, corn, rice, or gluten free if needed)

Step 1: Heat a pan, large enough to fit the diameter of your tortillas, over low-medium heat. Now, let’s start building your quesadilla!

Step 2: Place the first tortilla on the hot pan. Sprinkle a light layer of shredded cheese. Then add a layer of your warmed sloppy joe mixture. Top the meat with another light layer of cheese. Lastly, add the 2nd tortilla to finish.

Step 3: Allow the quesadilla to cook for several minutes. (You may need to turn down the heat to low if the cheese is not melting and the tortilla is browning too quickly. Cooking low and slow will produce the best result!)

Step 4: Flip the quesadilla once the bottom layer of cheese is melted and the tortilla has slightly browned. Cook another few minutes until the cheese on this side is fully melted. Remove the quesadilla from the pan. Allow to rest and cool for a couple minutes. Use a pizza cutter to slice into several wedges. Top with chopped pickles or dip in sour cream if desired!
