This one pot Broccoli Cheese Soup recipe loaded with fresh broccoli and plenty of cheddar cheese. It’s delicious on its own, but if you’re looking for what to serve with it, I have 10 great suggestions below.

Friends, a good Broccoli Cheddar Soup shouldn’t be underestimated. It’s outrageously good, hearty and warming, and one my whole family loves.

My recipe is similar to the Panera Bread version, but is next level with tender broccoli in every bite, plenty of real cheese (no Velveeta) and is ready in just 30 minutes.

This is a really great Broccoli Cheese Soup recipe from basic ingredients and an easy meal loaded with fresh vegetables. The creamy, cheesy taste makes it one the kids will love too. It may be the best comfort food around.

WHAT’S THE BEST CHEESE FOR MELTING IN SOUP?

The best cheese for soup has a lower melting point like medium to sharp cheddar, fontina, Gruyere and Swiss. I prefer sharp (or extra sharp!) cheddar in this recipe because it adds bold flavor without overpowering the broccoli.

Freshly grated cheese trumps pre-bagged shredded cheese every time. It melts easier and smoother becuase it doesn’t contain additives like pre-packaged shredded cheeses do.

That said, if time doesn’t allow shredding the cheese yourself, by all means use bagged shredded cheese.

CAN I USE FROZEN BROCCOLI INSTEAD OF FRESH BROCCOLI FLORETS?

Yes you can substitute a 12-16 ounce bag of frozen broccoli. Add it frozen to the soup and continue with the remaining instructions.

HOW TO I PREVENT THE SOUP FROM BEING GRAINY OR CURDLING?

Creamy cheesy soups can become grainy or even curdle but it’s an easy issue to avoid.

Add the half and half slowly while stirring the soup and when you’re ready to add the cheese, add it a little at a time letting it melt into the soup before adding more

WHAT’S IN BROCCOLI CHEESE SOUP?

• 1/4 cup butter
• 1 small onion diced
• 1/2 cup celery diced
• 1 cup carrots diced
• 1/4 cup all purpose flour
• 2 1/4 cups half and half
• 2 cups chicken stock (can substitute vegetable stock)
• 4 cups fresh broccoli cut in bite size pieces
• 2 cups freshly grated sharp cheddar cheese (8 ounces)
• salt and pepper to taste

HOW TO MAKE BROCCOLI CHEESE SOUP:

Add the butter to a large pot then once it melts, drop in the onions, celery and carrots. Season with salt and pepper.

Cook over medium heat to medium-high heat 2-4 minutes or until the onions are soft then sprinkle the flour over the top. Stir to blend well and cook one minute.

Whisk in the chicken stock then slowly add the half and half and chopped broccoli. Cover and cook over low heat 15-18 minutes or until the vegetables are tender.

Reduce the heat to low then slowly blend in the shredded cheese. Season with salt and pepper to taste. NOTE: I start with 1/2 teaspoon of salt and 1/4 teaspoon of pepper (adjust to your preference).

The soup is ready to eat at this point but if you like a smoother blend (shown in photos), use an immersion blender pulsing in several areas of the pot until it’s the consistency you like then enjoy with one of the suggested side dishes below.

NOTE: I recommend an immersion blender because it allows you to create different textures of soup – chunky or smooth but if you don’t have one transfer about one cup of the soup to a standard blender, puree then return it to the pot.

VARIATIONS TO THIS BROCCOLI CHEESE SOUP RECIPE:

Below you’ll find some additions or substitutions to my Broccoli Cheese Soup recipe:

• Vegetable oil or olive oil can be used in place of butter in the recipe, but butter gives the soup an extra richness you won’t get from oil.
• Whole milk can be used in place of half and half but the soup will be less creamy.
• Diced russet potatoes can be added for an extra hearty cheesy potato broccoli soup.
• To save time use bagged carrots (shredded or matchstick) and pre-cut broccoli.
• Try a cauliflower/broccoli combination in the soup.
