Where Do Morels Grow?
Though Morels can be cultivated (you can buy them at Fresh & Wild from February to April), wild Morels are the most flavorful. Wild Morels grow in the forest. They’re foraged in the United States, Canada, Europe, and even Turkey. Morels are more elusive and rare than many wild mushrooms, so the fresh Morels sale price can be somewhat high, especially at the beginning of the season.
What Do Morels Taste Like?
Wild Morel mushrooms are so delicious that people who typically don’t enjoy mushrooms often enjoy them. They are famous for their delicate nutty, woodsy, rich flavors and aromas. The texture is similar to meat, and they are prized by vegetarians.

Morels are typically roasted or sautéed. We made a video in our test kitchen that shows you how to clean, trim, cook and store Morels:
Contrary to popular belief, it’s fine to wash mushrooms. One doesn’t want dirt or pine needles to interfere with your dining experience! It’s not a question of if, it’s when to clean: scrub Morels to remove as much debris as possible, and if necessary, rinse with a bit of cold water or quickly dunk them immediately before trimming and cooking – the water will cook off.
How do you trim Morels?
It’s simple: Just cut off the rough ends of the stems, then slice in half vertically. Or, how can cut them horizontally into the shape of nickels to maximize surface area.
As with all wild mushrooms, we advise cooking for at least 10 minutes to help prevent illness.

There are several ways to cook Morels. In our video, we dry sear first to drive out the water, then saute in butter with shallots and garlic.
You can also roast them. Toss with shallot butter and spread onto a sheet pan, then into a 450 degree oven for around 10 minutes or until they start to darken.
Morels are extraordinarily versatile, and you can serve then many ways:
- Over fish, steak, pork tenderloin, spring lamb, etc. – they pair well with most meat and seafood
- Toss with pasta
- Add to polenta or risotto
- Enjoy with eggs and bacon (saute the Morels in the bacon fat for a real treat)
- Make a stuffing for turkey, chicken breasts, pheasant or roast beef
- Pair with other fresh spring produce, like white, green or purple asparagus, English peas, ramps, wild onions, stinging nettles and Fiddlehead ferns
- Excellent in soups
- Great in sauces, either stock-based or cream-based, with plenty of fresh herbs
