Unlike other types of ice cream, Thai ice cream rolls are made to order. To make ice cream rolls, vendors begin by pouring milk on a cold metal along with fresh fruits to create flavors.
Then, using trowels, they rapidly mash the combination and chop the fruits at the same time, preventing the milk from flowing away.
When the mixture is almost frozen, they will spread it over the cold plate, making a thin layer as it begins to take form. Next, they slide the trowel from one end of the plate to the other, creating small rolls of ice cream.
