MARBLE FALLS — Which Wich? and Coffee can bank on having the right ingredients at just the right time for a successful eatery, the owners said.

“We were simply blessed to have a good site which came available, so we jumped on that opportunity to make it happen,” said owner Russ Edwards, who’s family operates a Which Wich? establishment in Georgetown and recently sold one based in Harker Heights.

The business, scheduled to open July 13 at 311 U.S. 281 in Marble Falls, specializes in 51 sandwich selections. The Marble Falls location will be the first of the national franchise with a drive-through window and a coffee menu as well as Breakfast Whiches and signature Manske Rolls.

The restaraunt, under contruction, is the previous site of Atwood’s Holiday Treats, owned first by the Atwood family and recently sold to the Edwards by the Sivells family.

“I grew up across the street from the Sivells, so I’ve known them for a long time. This was my establishment after church on Sunday evenings that I use to go to,” Edwards said. “It was a family operation with the Sivells and Atwoods. It’s a good opportunity to continue what they started here, which is a great restaurant with great service and just a great passion for what they did.”

Edwards, his wife, Barbara, and their son, Tucker Edwards, director of operations, expect to continue the Sivells’ tradition.

Tucker Edwards, his wife, Jenn, and their two sons moved to the area for the business.

“It’s a great family atmosphere,” he said.

He will play a pivotal role, training 25-30 employees at the Marble Falls site.

“The Sivells had a sign on the inside of their restaurant that read, ‘Always preach the Gospel. If necessary, use words.’ Coming from the faith-based background, that’s one thing I’m looking forward to continuing at this location that the Sivells established originally,” Tucker Edwards said. “It’s the starting foundation with how we’re running the store in that sense.

“We’ll transfer that knowledge, faith and background to our employees and also the people who are coming through the door to enjoy sandwiches and coffee,” he said.
