Before you go posting your opinions in the comments I’d like to give some evidence for both sides, along with some contradictions or things that might debunk that bit of evidence. So please read through the evidence section of the post before you make your final decision.

The Files: In the files of Ruin, voicelines where the Mimic is pretending to be Gregory are labeled as Grimic, while voicelines where it is actually Gregory speaking are simply labeled Gregory. In the normal ending, the voicelines where “Gregory” explains that he can’t risk the Mimic following him, Vanessa, and Freddy, and proceeds to drop the elevator, are labeled Gregory in the gamefiles. This seems to tell us that it was actually Gregory who dropped Cassie. However, it is very possible that Steel Wool knew people would be digging around in the gamefiles and intentionally mislabeled the voicelines, as to not give away that it was actually the Mimic who dropped Cassie. In the past, they changed the Princess’ (Princess Quest) filename from Cassidy to just Princess, as if they didn’t want that part of the lore to be spoiled. It’s possible that they learned from this mistake and don’t want to give away the fact that Gregory is actually innocent.

Gregory’s a Murderer: In the Tales from the Pizzaplex story, GGY, Gregory is revealed to be Patient 46, which means that he has murdered several therapists for unknown reasons. If he is already a murderer, then it doesn’t seem to unlikely that he’d be willing to kill his best friend in order to stop the Mimic from escaping. However, it is very likely if not confirmed that during the events of the books when he was Patient 46, he was actually under the control of Glitchtrap. This means that Gregory actually hasn’t truly murdered anyone of his own free will other than the Glamrock Animatronics who were actively trying to murder him.

The Audio Interference: During the elevator ending, before “Gregory” says that he understands that it’s not Cassie’s fault, we hear some very noticeable audio interference , which might signal that the Mimic has retaken control of the intercom and is trying to trick Cassie into thinking that Gregory is the one who betrayed her.

The Subtitles: After we hear the audio interference, the subtitles seemingly introduce a second Gregory when they double up on each other. This might hint that the one speaking is a different Gregory to the one who was talking to us a few seconds before. However it is very possible that this is just an issue/bug with the subtitles. They did seem to be rather delayed before the interference.

The Battery: If you pay close attention, you’ll notice that there is actually a large battery connected to the elevator right next to the elevator door. All the Mimic would have to do to drop the elevator is reach over a few feet and disconnect that battery. While Gregory would need to somehow have remote control of that one single elevator from outside the Pizzaplex.

The Way Back: The elevator wasn’t actually the only way out of the Pizzaplex. In case you somehow forgot, Cassie actually broke through the concrete wall that was keeping the Mimic from escaping. This means that the Mimic could just go back through that now open door and go up through the abandoned Pizzaplace and Pizzaplex and he’d be free. Disconnecting the elevator wouldn’t prevent the Mimic from escaping, and the Mimic doesn’t need to worry about breaking the elevator because there’s another way for it to get out. However, it’s possible that Steel Wool just forgot about the other way out.
